Anyway, today I feel physically much better than yesterday. And I feel like I've hit my stride with this challenge. Shame it ends tomorrow. I will have to think hard on what my last Live Below The Line meal will be. And what to have for breakfast on Saturday morning.
I was very pleased with my tomato and rice soup. I just pushed a tin of tomatoes through a sieve, added a tin of water, a tablespoon of tomato puree and a pinch of dried basil. Cooked it for 5 minutes over a medium heat, then added a large handful of rice and simmered for 10/12 minutes until the rice was tender. The result was tasty and filling.
What I ate today:
Breakfast: Plain porridge, an orange, hot water with lemon. (anyone noticing a pattern here?)
Lunch: Tomato soup with rice, carrot sticks.
Dinner: Rice and vegetables. (no photo, sorry)
Off to work now.
(ps. I had a costume fitting this morning and was offered tea and a sandwich and many biscuits which I declined. Yay me.)

The tomato soup looks delicious, and so simple, definitely an idea for me to pinch!
